Apple Butter

Apple Butter

20 pounds Apples, peeled and diced.
2 quarts Sweet Cider. 
4 cups Sugar.
1 Tablespoon Cinnamon (or 3 large Cinnamon Sticks) 
1/2 teaspoon Anise seeds. 

Boil down to 3 quarts.

White fudge

White Fudge.
2 1/2 pounds.

3 cups Sugar. 
1 cup Milnot*
1 7oz jar Marshmallow  creme. 
3/4 stick Oleo (butter).
1 12oz package Flaked Coconut. 
1 cup Chopped Nuts. 

Mix sugar Milnot and Oleo (butter) together and cook until mixture comes to a boil, stirring frequently,  boil for 5 minutes stirring constantly.   Remove from  fire and stir in Coconut and Marshmallow Creme.  Stir until mixture is creamy and smooth.  Pour into buttered 9x9 pan.  Allow to cool and cut.

* Milnot is a brand of canned milk.







Ginger Bread


Ginger Bread.

1/2 cup Shortening. 
1 cup Molasses. 
1/4 cup Milk. 
1 Egg. 
2 cups Flour. 
1/3 teaspoon Salt. 
2 teaspoons Ground Ginger. 
1 teaspoon (Baking) Soda. 

Melt the Shortening and add it to the molasses  with the slightly beaten egg  and the milk. Mix thoroughly.  Then beat in the flour salt ginger and soda sifted together. Turn into one large or two small, well greased shallow pans and bake about 25 minutes in 350 - 370 oven.  Remember that any mixture containing molasses burns more rapidly than one which sugar is used for sweetening.

Mom's Favorite Pumpkin Pie

Pumpkin Pie 
My favorite *

1 9 - inch unbaked Pie Shell. 
1 cup Brown Sugar. 
2 Tablespoons Flour. 
1/2 teaspoon Salt. 
1/4 teaspoon Cinnamon. 
1/4 teaspoon Nutmeg. 
1cup Cooked Pumpkin. 
2 cups diluted Milnot **
2 eggs, beaten. 

   Mix sugar, flour, salt and spices together and stir in pumpkin.  Add Milnot and eggs. Pour into Pie shell and bake at 450F for 10 minutes, reduce heat to 350F and continue baking for another 24 - 30 minutes or until filling is firm.

* Mom's note,  "My favorite". 

** Milnot is a brand of  evaporated milk, with enough water added to make 2 cups.

Left Over Mashed Potatoed 1868

Left Over Mashed Potatoes, 1868

Add enough flour to make a dough thick enough that can be  rolled out, a shake of Salt and Pepper added to flour. Roll out on floured board, then cut in oblong pieces then roll each oblong piece into  kind of a  horn shape by putting a thumb on a corner and roll around.
Dry these as you would dry fruit.
 These can be added to soups or broths - cook covered about 7 minutes till they come to top.

Cinnamon Rolls.




Growing up, we had homemade sweets all the time. Cakes, cookies, brownies, crisps and cobblers. Mom grew up in Rural Missouri, and everyone worked hard every day. Her grandfather raised and trained mules. He used the mules every day.  Mules knew he had a treat for them and it may have been a cookie or a treat out of the garden.

Cinnamon Rolls. 

2 1/2 cups Lukewarm Water. 
2 packs Yeast. 
1 box Yellow Cake Mix. 
6 1/4 flour, divided. 
3 Eggs. 
1/3 cup Oil.
1 teaspoon Salt. 
Soft Oleo (Butter)  
Sugar. 
Cinnamon and Raisins. 

Dissolve Yeast in lukewarm Water for 3 minutes.  Add Cake Mix, 1 cup Flour, eggs, Oil, and Salt.  Beat until bubbles appear.  Slowly add 5 1/2 cups flour.  Stir with Spoon, making a soft dough, knead on board 5 minutes. Let raise until double. Roll out to 1/4 inch thick. Spread with Oleo (butter)and add Sugar, cinnamon and Raisins. Roll up, cut 1 inch thick. Place on greased pan. Let raise. Bake in 350F oven 20 tp 30 minutes.  Ice while still hot with Powdered Sugar .


.Turkey Hash

As a single Mom of three kids, Mom couldn't afford to toss out left-overs. She came up with many ways to make over left-overs. I would help her as I grew up.
After we had finished our Thanksgiving dinner and we were clearing the table, we would make up plates, to wrap in plastic wrap, and then freezer paper. Then labeled and placed in the freezer, to become T.V. dinners. Mom and I would strip the meat off the bones making sure we didn't leave any small bones in the meat. Mom also saved the broth from the pan. Some, she poured over the stuffing that was left over. Some was frozen, to use in Turkey noodle soup, some to make gravy for those T.V. dinners.









Turkey Hash  
Serves 6
8-18-92

6 Tablespoons Butter. 
1 1/2 cups chopped Onion. 
1/3 cup chopped Pepper. 
1/4 cup Flour. 
1 Tablespoon Instant Chicken Bouillon. 
2 cups Milk. 
1 Tablespoon Worcestershire Sauce. 
4 cups diced cooked Turkey. 
Optional,  Parsley Basil,  Mushrooms. 

Melt butter in large iron skillet. Saute onion and pepper 10 minutes, remove from heat. Stir in flour and bouillon.   Gradually stir in milk and Worcesttershire Sauce. 
Return to heat,  bring to boil stirring constantly, boil 1 minute. Stir in Turkey,  and heat through.

(Add in any optional items with the Turkey.)

Old fashioned fudge.

Old Fashioned Fudge...

2 cups sugar
4 Tablespoons Hershey's cocoa
1 stick of salted butter
5 ounce can of Carnation Evaporated Milk
1 teaspoon of vanilla
nuts are optional...

Mix sugar and cocoa in a saucepan, then add a stick of butter and the can of evaporated milk, and stir until the mixture starts boiling.
Stir continuously for 7 minutes, then remove from heat and add vanilla, then stir the mix continuously for 3 minutes, then pour into a buttered baking dish to set.
Great fudge in less than 20 minutes!

Cappuccino mix.



Cappuccino mix
Makes 3 cups. 

1 cup instant Coffee Creamer. 
1 cup Chocolate Mix. 
2/3 cup Instant Coffee. 
1/2 cup Sugar. 
1/2 teaspoon Cardamom. 
1/4 teaspoon Nutmeg. 

Combine all ingredients; mix well.
Store in airtight container.
3 Tablespoon mix to 6 ozs Hot Water.

Fruit Salad no. 2

Fruit Salas no. 2. 

1 can Mandarin Oranges, drained. 
1 small can Crushed Pineapple, drained.
1 cup miniature Marshmallows or the Large ones, diced. 
1 cup Anglw Flaked Coconut. 
1 cup commercial Sour Cream. 

Mix good and let set for a while.

One Cup Salad.

One Cup Salad

1 cup crushed Pineapple. 
1 cup Cherries, Sweetened. 
1 cup Fruit Cockt6, drained. 
1 cup small morsel Marshmallows. 
1 cup Flaked Coconut. 
1 cup commercial Sour Cream., whipped. 

Drain the fruit. Do not use any of the juice.

Mix all together and add the whipped cream.Cream.
This keeps real well. Over for another fruit salad .

Potato salad

Potato Salad
Serves 5 to 8

8 to 10 potatoes, cooked. 
1/2 cup Chopped Sweet Pickles. 
1/2 cup Chopped Onion. 
1 bunch Radishes,  sliced. 
1/2 large Cucumber, diced. 
1/2 cup Mayonnaise. 
2 Tablespoon Juice from Pickles. 
1 Tablespoon prepared Mustard (yellow Mustard)   2 teaspoons Salt. 
1/4 teaspoon Celery Seed or 1/4 cup Chopped Celery. 
3-4 hard boiled eggs, diced.

Turkey Hash

Serves 6
8-18-92

6 Tablespoons Butter. 
1 1/2 cups chopped Onion. 
1/3 cup chopped Pepper. 
1/4 cup Flour. 
1 Tablespoon Instant Chicken Bouillon. 
2 cups Milk. 
1 Tablespoon Worcestershire Sauce. 
4 cups diced cooked Turkey.

Corn Pone

Corn Pine
2 cups White Cornmeal. 
1 teaspoon Salt. 
1/4 teaspoon Baking Soda. 
4 Tablespoons Lard. 
3/4 cup Boiling Water. 
1t2 c Buttermilk. 

   Stor Cornmeal, salt, baking soda together. Work in lard until well mixed.  Pour in boiling water and continue to work.  Gradually add enough Buttermilk to make a soft dough but jeep it firm enough to be molded in to small oblong cake.  PlCe in a Hot, well greased skillet and bake in a 350F oven for about 40 minutes.


No bake cookies

No bake cookies 

We have been making these since the mid 1960's. A classic that is rich and filling.

1/2 cup Butter (1 stick)  
2 cups Sugar. 
1/2 cup Milk. 
1/4 cup Cocia powder. 
1/4 teaspoon Salt. 
1/2 cup Peanut Butter. 
1 teaspoon Vanilla. 
3 cups Oatmeal. 

Prepare 2 cookie sheet by covering with foil, wax paper or parchment baking paper. 
Set aside while mixing up the cookies.
Measure out everything.
In a medium sauce pan, butter, sugar, milk, salt and Cocoa powder. 
In a large bowl, place the oats, peanut butter, and vanilla.

Bring the pan to a boil and boil for 2 minutes. Immediately remove from heat and pour over the Oatmeal and peanut butter. Mix together quickly and drop by large spoon onto the prepared cookie sheets allow to cool and set up.

Store in covered container(s).

Mock Mince pie

Mock Mince Pie (1871)

5 crackers (20 squares) rolled fine. 
1 cup chopped Raisins. 
1 cup Molasses. 
1/2 cup Butter. 
1/2 cup boiled Cider. 
¹/3 cup vinegar. 
1/2 cup Sugar (more if you like it sweeter) .
1 teaspoon Cloves (ground).
1 teaspoon Cinnamon. 
1 teaspoon Allspice. 
1 teaspoon Nutmeg. 
1 cup chopped Apples. 

Mix all together, cook for a few minutes.
Make the pies with two crusts, as you would with real mince pies.

Corn Relish




Corn Relish. 
24 ears of Sweet Corn. 
1 head of Cabbage. 
4 Large Onions. 
4 Green Peppers. 
1 Red Pepper. 
1 quart  Vinegar. 
2 cups Sugar. 
3/4 cup flour. 
1/2 cup Salt. 
1/4 cup Dry Mustard. 
1 teaspoon Turmeric. 
1 quart Vinegar. 

Cut Corn from cobs, chop  the other vegetables fine, first remove seeds from peppers. Add 1 quart vinegar and set to boil, mix together the seasoning and flour, gradually add the other quart of vinegar(cold) ( into the seasonings) and stir into Hot vegetables. Let boil 1/2 hour.  Store in 
HOT HOT  sterilized jars.

Seeing this picture reminded me if my childhood. Growing up in Western Colorado, the mountains would be Golden in fall with the Aspin leaved still clinging to the branches, and the white and black speckled  trunks standing on the sides of the mountains along side all the evergreens.

Bread Pudding

My Mom's favorite dessert was Bread Pudding. She would top each serving with Vanilla Ice Cream.

Bread Pudding

4 eggs, slightly beaten. 
6 Tablespoons Sugar. 
1/4 teaspoon Salt. 
1 Tablespoon Butter. 
1/4 reaspoon Nutmeg. 
1/4 teaspoon Cinnamon. 
3 cups scalded milk. 
1/2 cup Raisins. 
1 3/4 cups Bread Crumbs. 
1 teaspoon Vanilla. 

Combine Eggs, Sugar, Salt, Butter and Spices. 
Add Milk slowly, stirring constantly. 
Add Raisins, Bread and Vanilla,
Mix thoroughly.  Pour into well greased baking dish.  Set in pan of warm water.  
Bake in moderate oven (375F), until an inserted knife comes out clean.
