" Home Churned" Chocolate Chip Cookies

" Home Churned" Chocolate Chip Cookies
from the back of a box of "Home Churned" Margarine (store brand)

2 1/2 cups All-Purpose Flour
1 teaspoon Baking Soda
3/4 cup margarine (stick, melted and cooled)
1 1/2 cups Brown Sugar
1 Egg
1 teaspoon Vanilla Extract
1 cup Semi Sweet chocolate Chips
Preheat oven to 350F.
Combine Flour and Baking Soda, set aside.
in a large bowl, combine margarine and brown sugar. Mix well. Stir in egg and vanilla extract until well blended. Add flour mixture and stir until combined. Stir in chocolate Chips.
Drop by Tablespoon onto an un-greased cookie sheet. Leave 2 1/2 inches between each cookie for 8 to 11 minutes or until edges harden and center is set.

During the holiday months, it seems everyone is making special treats and desserts. Halloween is no exception! Some of those fancy treats can be a little intimidating to try to make. So today I wanted to share a Halloween dessert that you can make with your kids. It's delicious and simple enough for even young children to make with only a little guidance.

I found these cute plastic Frankenstein cups at Wal-Mart, and knew my kids would love them!

Here are the ingredients you'll need for this silly and spooky dessert:

vanilla instant pudding
milk
green food coloring
1-2 bananas
chocolate cookies or graham crackers
Green Apple Candy Corn (Brach's brand)

Here's the fun part! Let your kids help! I know, it's hard to do sometimes. It's hard to let them make a mess. But if you let go and just do it, it's So. Much. Fun.
My daughter loved stirring up the pudding with a whisk and adding the green food coloring.

We used neon green food coloring and a little green gel coloring to get the right slimy color. :) I like to put my kids in old play clothes or a paint shirt so I know I won't stress about stains!

I wanted to add a little bit of healthiness to this snack…so I had the kids practice their cutting (another way you can get them involved!) and added some sliced bananas to the bottom of the cup.

Spoon it in to fill up Frank's head…

Make sure the kids approve. This guy sure did!

Another fun way for kids to help in the kitchen is with the cookie crumbs. I love using a small ziploc bag for anything that needs to be crumbled or mashed – the child can help and have fun with minimal mess! Mine love to squish up ripe bananas for banana bread.

Add the crumbs to the top of the pudding (we used chocolate graham crackers) and serve up your spooky Halloween dessert with some of "Frankenstein's teeth" (Yummy Green Apple candy corn!)

Pumpkin Cookies

Pumpkin Cookies

The cookies are very good and the recipe is easy!

Ingredients:

  • 1/2 cup butter or margarine
  • 1 1/2 cups sugar
  • 1 egg
  • 1 cup cooked or canned pumpkin
  • 1 tsp. vanilla
  • 2 1/2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1/2 cup diced roasted almonds (you can use walnuts)
  • 1 cup chocolate pieces

Directions:

Cream butter and sugar together until light and fluffy. Beat in egg, pumpkin, and vanilla. Mix and sift flour, baking powder, baking soda, salt, nutmeg, and cinnamon. Add to creamed mixture, and mix well. Add nuts and chocolate pieces, and mix thoroughly.

Drop by teaspoons onto well-greased cookie sheets. Bake at 350 degrees F for 15 minutes or until lightly browned. Remove from cookie sheets while still warm, and cool on racks.

Bumpkin Pumpkin Bread

Ingredients:

  • 3 1/2 cups sugar
  • 3 cups flour
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1 tsp. allspice
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 4 eggs
  • 1 cup oil
  • 1 can of canned pumpkin
  • 1/2 cup nuts
  • 1/2 cup raisins

Directions:

Mix all the ingredients. Butter and flour 3 clean coffee tins. Fill each tin halfway and bake the bread at 350 degrees F. for 1 hour. Let cool slightly and turn upside down to slide out. Let cool and slice as thick or thin as you want.

Note: Clean coffee cans can also be used for cake mix cakes. Just bake, cut in half and you have 2 small personal cakes.

Payday Snack Mix

 
Payday Snack Mix
This season's beloved candy is the key ingredient in this tasty snack mix. Combine it with honey roasted peanuts and you've got yourself a snack mix that tastes just like a Payday candy bar. So simple and satisfying at the same time. Hope you like it; and Happy Halloween!

Ingredients:

  • bag of candy corn
  • can of honey roasted peanuts

Directions:

Combine the two into a bowl, container, Ziploc baggie, etc. Yep, that's it!

Googly Eye Cake

Googly Eye Cake

Ingredients:

  • A cake mix for a double layer 10 inch round cake. (You'll also need the ingredients required by the cake mix instructions.)
  • Two cans of chocolate frosting.
  • A pastry bag and several tips (star and thin).
  • Two tubes of decorative icing (white and black).
  • An assortment of candy such as Necco Wafers, Life Savers (Gummy or Hard), M&Ms (Different Sizes), etc.

Directions:

Make two 10 inch round cakes using one box of cake mix. Cool and remove the cakes from the pans according to the instructions.

Place one layer on a plate, cover the top with frosting and frost the sides lightly.

Place the second layer on top.

Put the remainder of the frosting in the pastry bag and use the star tip to make the cake look "furry". You should cover the top of the cake and down the sides of the top layer with frosting.

Decorate the cake using the round candies and the decorative icing with the thin tip. Place two round candies side by side and affix smaller candies to the front using icing. The pupil of the eyes can be made using white icing.

Black icing can be used for eyebrows either above the eyes, around the eyes, or in a line slanted across each eye. Black icing can also be used for eye lashes. You can also add light glints and other effects.

Variations and Hints:

  • Brown makes for the best "fur" color, but other colors of frosting can be used.

  • A different flavor of frosting or a pudding can be used between the layer cakes.

  • We put the number candle on before the eyes so we were sure there'd be room for it.

  • Lighter candies should be placed on the sides of the cake so they don't slide down.

  • Some of the eyes can be centered and others at crazy angles for a googly eyes effect.
